Clean Eating: Chocolate Raspberry Protein Muffins

Another Tone It Up Recipe! Say Yayyyy!!!

I skewed this recipe from the Tone It Up community to make it more to my liking. The original recipe called for 'Blueberry Protein Muffins'. I honestly can't find where I found it because I printed it awhile ago on a Word document without any reference. I did not make this recipe up.

Yes, the Stevia is all messed up on the top row, 3rd muffin in because Olivia almost fell from holding onto the ottoman and I dropped the whole packet onto that one muffin… 

I'm not a big fan of blueberries so I changed the protein powder to chocolate protein powder and the fruit to raspberries. For this recipe I used Perfect Fit Protein from the girls of Tone It Up

2.5 cups Protein Powder (I used Chocolate for this recipe)
1.5 cups egg whites
3 tbps almond powder
2 tbsp ground flaxseed
3 tbsp almond milk
2 tbsp water
1 mashed banana
1/4 cup of organic, no sugar added applesauce
1.5 tbsp cinnamon
3 tsp baking powder
pinch of sea salt
berries (I did 1/2-1 cup)

Mash banana and almond milk together first.

Add in the rest of the ingredients from watery to powdery (that's the best way I can describe that)
Gently add in berries when all ingredients are mixed

Bake 15-20 minutes at 350 degrees.
Spray pan well and spoon mixture to the top. There isn't flour/yeast to make it rise so you can top it up.

Sprinkle with powdered stevia for extra sugar flavor and enjoy!

**Chances are your husband will not enjoy these. There is no way to "husband" these up. Be warned though that if you use Perfect Fit Protein you should plan on eating them yourself and keep them in the fridge. I say this just because PFP is not cheap and last time I made them I kept them in tupperware on the counter and they spoiled quickly. These are great for breakfast or as an occasional dessert. There is no "after" picture because, hey, we can't all be Lauren Conrad. (If you didn't realize it yet, LC is the new Martha Stewart FYI)
