Clean Eating: Black Bean and Red Quinoa Salad Tone It Up approved for M5

I haven't done a recipe in awhile and tonight I threw together this recipe for myself because Rich was at a meeting so I was on my own for dinner. I had no plan in mind and just made a recipe based on what I had in my fridge and pantry. I'm not kidding- this is AMAZING! Best part, it's clean and Tone It Up M5 approved!


All ingredients come from Trader Joes. Ingredients below make for 2-3 servings. 
Forewarning: My recipe/cooking lingo is not like that of others. I use my own words/references. Refer yourself here and decide if you want to come back. Ex: I don't know if I used a saucepan for the quinoa, it was a pot- or whatever. 

Ingredients:
Can of Black Beans 
Half an avocado
Spring Mix salad
1 Cup Red Quinoa
2 Cups of Sodium Free Chicken Broth
Tbs. of Cumin (more or less to taste- I love Cumin)
1/2 Tbs. Chili Powder (more or less to taste- I love spice)

"Dressing"
1 TBS. Black Bean Dip from TJ's
2 TBS. Garlic Chipotle Salsa from TJ's
(Mixed together with a fork in a separate bowl) 

Ingredients I wish I had added but either didn't have or was too lazy to cook to add:
Diced chicken
Halved grape tomatoes
Sriracha


Here are the ingredients I used: 
Plus the vegetables and spices of course. 


1. Cook 2 cups of chicken broth with 1 cup of the organic red quinoa in a saucepan.
2. Cook your can of black beans (I did it in tupperware in the microwave)
3. In a side bowl combine your salsa and black bean dip to use as the 'dressing'
4. When quinoa is just about ready (aka water is almost gone) add your cumin and chili powder
5. On your plate spread your spring lettuce mix, top with drained black beans, quinoa, avocado, dressing and any other toppings. I wish I had chicken and halved grape tomatoes but it was delicious all by itself.

Calories for the entire recipe:
350 beans
160 avocado
640 quinoa
10 chicken broth
5 lettuce
30 black bean dip
5 salsa
1200 calories for 2-3 servings (600-400 calories per plate) 




And now for a little bit o dis n dat since I've been busy neglecting SMD:


Olivia had her first taste of spaghetti and dug it. 



I was reminded of why I don't dye my own hair. Haven't done it since I was in high school and it turned out light at the roots with no change at the ends. Time to book a session with Lucy to fix this.




Olivia had her Easter photos on Wednesday and was in no mood to do so. She stared at the photographer with a blank face the entire time. No expression. Not crying- just not smiling. Every single picture is the same except for the one photo where she growled at the photographer showing her 4 teeth wearing bunny ears. I ordered an 8x10 of that one.


Had a Mommy's Night Out on Wednesday which was MUCH needed. Olivia has been very fussy these past few days for no reason. She whines when we hold her, when we set her down, when she's eating, when she's playing, when I won't let her bite me in the face, when I won't let her slap me, etc. Of course the entire time I was wondering when I could get back to my babe and kiss her goodnight. She sure does have a soft spot in my cold little black heart. 

It's now snowing and it's April 3rd. When will it stop??? I need Spring. I need it. Easter will be spent building snowmen, drinking hot cocoa, and singing carols at this point.
