Lazy Mom Recipe: The Easiest, Tastiest Broccoli Cheese Soup

Lazy Mom Recipes are when you don't feel like cooking but people will starve/be hangry if you don't do something about it.  Bonus: the crockpot does everything for you. I don't know how I survived without a crockpot. Today I'm sharing one of my favorite easy recipes to make for lunch or dinner. While this isn't one of the healthier recipes I've done, it's certainly delicious and great comfort food in these cooler months.  Honestly though, you guys, this is SOOOOO GOOD....

Prep time: 5 minutes

Cook time: 3-4 hours in the crockpot on low.

Ingredients:

  • + 12 ounce bag of frozen broccoli
  • 2 tbsp. butter
  • 12 oz. can of evaporated milk
  • 10.5 oz can of cream of mushroom soup
  • 10.5oz can of cream of chicken soup 
  • 10.5 oz can of cream of celery soup
  • 1/2 brick (1lb.) of Velvet cheese, cubed so it melts faster. 
  • Onion (optional) 
Spray your crockpot with some no-stick spray (don't forget this step! Take it from me who has forgotten many a times). Toss everything in the pot with the onions and butter on the bottom. A lot of people don't like onion but I think they belong in just about every dish. But hey, this is your soup. You're the boss, applesauce. 

Stir everything together. 

Cook on low for 3-4 hours. 


Enjoy with some french bread!
